Berry Quinoa Bowl

Ingredients:

- ½ cup Quinoa

- 1 cup berries – choice of blueberries, raspberries, cut strawberries (fresh or frozen)

- Natural sweetener (honey, agave, natural maple syrup)

- ¾ cup Almond milk

- 1 tbsp pumpkin seeds

- 1 tbsp chia seeds

- 1 tsp pure vanilla extract

Directions:

1.  Boil quinoa until soft (this can be done the night before) – cook in rice cooker if you have one

2. Heat the berries on the stove (on LOW) with a little bit of water, add sweetener until melted & berries are soft

3. Take berries off stove, add quinoa, berries & vanilla extract to bowl. Mix.

4. Add Almond milk to bowl (can add more or less depending on if you want it like cereal or oatmeal)

5. Add yogurt if you want a thicker texture

6. Sprinkle seeds on top
