My Go To Salad Dressing

I love having "go to" recipes that I can just whip up quickly when I'm in a bind. I wanted to share with you this salad dressing that is so simple & very fresh! I did it with kale, avocado & ham for lunch yesterday, but you can combine make up your own salad creation! 

Right now we are staying at a vacation rental because our normal rental house is being remodeled… so I don’t have all of my favorite brands of ingredients, BUT I will link my favorites down below :) 

Ingredients:

  • 2 tbsp olive oil
  • 1/2 lemon, juiced
  • 1 tbsp MCT oil (adds a little coconut taste!)
  • 1/2 tsp pink himalayan sea salt
  • 1/2 tsp black pepper 

Directions:

Toss greens in a large bowl with the ingredients listed above. Mix well & serve onto plates. Add whatever toppings you desire! (avocado better be on there, like duh!) :)
